Obtained from our geese, a variety descending from the European wild goose “Anser anser“, raised in our fields while keeps its winter migration instinct , producing a unique quality red meat. Our Rillettes are made of meat fibers from our geese, slowly cooked at low temperature. With a fine and soft hunting flavor, also shows countryside traces due to the free range raising at the “dehesa” with its pastures and acorn.
Remove from fridge some 15 minutes before tasting. That will allow a partial meltdown of the fat inside the meat fibers, so we get a perfect texture and all the taste details. Spread on small toasts and sprinkle some slat flakes. If you want to enjoy our rillettes with a bit of marmalade or chutney, we recommend to avoid citric fruits, and try apple, figs or more exotic mango.
We recommend a classic and well aged decanted red wine like Bordeaux, Bourgogne, Rioja o Ribera del Duero.
